The GoR commits a school's media rights to the conference, not to ESPN. The conference retains those rights for the duratuion of the contract, whether or not the school remains a member of the conference. If the GoR is voided when a school leaves, then don't waste the ink, because the intention is for the conference to retain media rights regardless of conference affiliation. If ten schools left the ACC, the remaining four would still own the rights to the home games of those ten schools' who defected.
The big unknown is how the ACC-ESPN media deal addresses conference membership (composition). Are certain teams specified as critical or non-critical? Does it mention teams by name at all, or does it just go by number of teams? Does the contract become invalid, or does the payout merely take an adjustment? There are countless variations. I have to believe that ESPN would protect itself from being stuck with an ACC media deal that doesn't include the premier teams.
